(Fall, Spring, Summer) (8-week course) This course provides an overview of health, safety and nutrition issues related to early childhood programs. Students will learn how to implement policies and procedures to ensure safe and healthy learning environments are available for children. Topics include proper emergency preparedness procedures, recognition and prevention of childhood diseases, child abuse and neglect, and USDA recommendations for food service and management.
